When mulberry season arrives, you’ll find yourself stuffed with berries. Mature mulberry trees are highly productive, producing 60-100 gallons per year. Unless you want your berries to go to waste, you probably want to know the different ways to preserve mulberries this year.
Every year, I try a new way to use mulberries. I might be making a new muffin recipe or a new dessert for my family to enjoy, and I’m always on the lookout for additional techniques to use them up and make them last.

Delicious ways to preserve and use your mulberries
Let us tell you, mulberry trees are abundant and up to 100 gallons of berries can be produced every year. If you grow mulberry trees, you are likely to have more berries than you know.
Don’t let all your mulberries go to waste (though the birds thank you) or fall off the tree without being used. Try some of these ways to preserve mulberries this year.
1. Freeze Fresh Berries
Every day throughout the harvesting season, I collect at least a gallon of berries, so I need to freeze them because I don’t want to make or cook every single day. The easiest way to preserve mulberries is to freeze them for later use.
Frozen mulberries can be used for many different things. After thawing, they can be made into pies, over ice cream, jams, jellies, or smoothies and other savory dishes.
There are two ways to freeze mulberries.
First, spread the berries in a single layer on a baking sheet and put in the freezer until solid. Then, transfer the berries to a freezer bag. This method keeps the berries from freezing to each other, so it’s a great option if you plan on scooping the berries out for smoothies and single use.
Another way to freeze mulberries is to put all the berries in a freezer bag and freeze them all at once. I do this when I know I’ll be using the whole bag at once for something like jam or jelly.
2. Ice Cream
If you want a sweet, homemade treat to cool you down this summer, make some mulberry ice cream. When paired with sugar and cream, mulberries make for a great combination of tangy yet sweet that our family loves.
Making mulberry ice cream is a great way to preserve mulberries because ice cream keeps good in the freezer for several months. If your mulberry tree produces enough berries, you can enjoy the taste of summer in mid-December! Plus, who doesn’t love knowing what’s really in their ice cream?
You’ll need an ice cream maker to make your ice cream, but it starts with mixing the ingredients. I love this recipe from The Local Rose that uses fresh mulberries, honey, whole milk, heavy cream, and vanilla extract.
Instead of ice cream, why not try mulberry sorbet instead? You can add alcohol to your sorbet to change the texture; This wonderful recipe uses elderberry liqueur, which adds a great flavour.
My favorite thing about making mulberry sorbet is that you only need a few ingredients. For best results, make sure you remove all green stems from the berries; They don’t taste so good in sorbet.
Whether you use fresh or frozen mulberries, turning these berries into jam is one of the best ways to preserve them. Mulberry jam tastes great on a slice of freshly baked bread or mixed with some yogurt.
Mulberry jam is easy to make and canning-friendly, especially if you’ve canned it before. You will need six cups of fresh mulberries for one batch of berries. Take a look at this recipe from My Homestead Life; It is so easy that beginners can try it.
5. Lavender Jam with Honey
If you want to make different varieties of mulberry jam, this recipe sounds amazing. Adding lavender to the recipe gives it a more aromatic property. You must have fresh lavender for this recipe; Drought won’t work either.
Our family prefers mulberry jelly over jam; Fruits contain seeds that some do not like. The downside of making mulberry jelly is that it requires an extra step—juicing the berries.
Everyone has a different method for this. You can use a juicer if you have a juicer available, or you can boil them and strain them through a fine-mesh sieve. Others puree them and then run the puree through a sieve.
You just have to find what works for you.

7. Can Pie Filling
If you love to bake homemade pies but hate taking the time to make filling while assembling the crust at the same time, you need to make some mulberry pie filling beforehand. It’s a great way to preserve your mulberry harvest year-round and keep delicious sweets for your family.
I usually fill my mulberry pie in a quart jar; It’s the perfect size for a family, but pints or half-pints work well if you want to eat it out of a jar. Use fresh or frozen mulberries when making pie fillings. I almost always use frozen because I freeze all mine before I start preserving at the end of the harvesting season.
If you don’t have enough mulberries, you can also make fruit combinations, as recommended by Food Preservation. I’ve tried mulberry and blackberry – it’s such a great combination! I’m sure it would be delicious with rhubarb too.
Then, use this recipe to make the best mulberry pie you’ve ever had. Trust me, this recipe is amazing to hand. You can even freeze the pie without thawing it and bake it later!
If you make mulberry jelly, why not make a batch of mulberry syrup at the same time? It’s a great way to preserve mulberries, and it’s versatile. You can use mulberry syrup on ice cream, pancakes, waffles, muffins, cupcakes, yogurt, oatmeal, cheese, and more.
The process begins with making juice. Juice or boil your mulberries for an hour before straining the liquid. Once you have mulberry juice, all you need is sugar and lemon juice. Do you like mulberry juice? Don’t let it go to waste; You can make a bunch of mulberry juice and save it for later. On average, one liter of mulberry juice is produced from 2.5 pounds of mulberry.
It’s so easy to make – it’s the perfect way to preserve mulberries for beginners. Tasty Kitchen has an easy recipe that almost anyone can follow. Mulberry juice can be safely frozen or canned; I recommend making it a little stronger with more sugar and using it as a concentrate which you then dilute with water.
10. Dehydrate Mulberry
After freezing and canning, the next best way to preserve mulberries is to dehydrate them. When you dehydrate fruits, it is essential that you dry them completely to remove any moisture that could cause mold or mildew on your foods.
Dehydrated mulberry can be used in many ways.
You can rehydrate them for recipes or use them in their dry state as a snack. Dehydrated mulberries have a raisin-like texture if you leave them a little squishy. Try putting them in baked goods to see if you like the flavor!
11. Make Fruit Leather
Which kid doesn’t like fruit leather? This is one of our favorite ways to preserve mulberries for our kids to enjoy as an easy and healthy treat.
You can make fruit leather in your oven or dehydrator; I love dehydrators. I often mix it with different fruits to make delicious flavor combinations, but everything should be pureed into a smooth consistency. Then, spread it on a leather tray of fruit or parchment paper in the dehydrator or oven on the lowest setting.
I like to use parchment paper because I can cut them into strips and roll them up like a homemade fruit roll-up.
