She got the recipe from Jenny Martinez, whose YouTube channel is largely dedicated to sharing authentic Mexican recipes, and the bubbling cheese dip completely fascinated us. I mean, look at it! We can practically feel it through our screens.
Whether you want a quick snack or you’re really in the mood for all the cheese, this queso fundido recipe is the perfect solution. The dip requires only two ingredients (chorizo and cheese) and a few minutes on a stove. Chorizo is seasoned pork (can be minced or minced) commonly found in traditional Mexican dishes and goes well with tacos, quesadillas and even eggs. Simply cook the chorizo in a thin frying pan, bring the meat to the center of the pan and surround it with cheese and let it bubble and melt. Either pick up fries at your local store or make your own by frying tortilla strips in oil, and dig. - 1 full package of chorizo
1 bag of Oaxaca cheese or grated Mexican cheese
- In a thin, hot pan, cook the chorizo. It will take a few minutes.
- Once the chorizo is fully cooked, collect it in the center of the pan. Then sprinkle cheese around the edges of the chorizo. Leave the cheese bubble, then remove from the heat. Let the queso fondido melt for a minute or two before digging with fries!
