Gluten-free chocolate chip cookies + vegan nuts

OOne of our indulgences during this quarantine was the baking of cookies. I am gluten-free and have found that many of my old relief treats don’t taste the same. It’s good because we don’t eat a lot of treats, but sometimes you just want a little something really delicious, you know?

Well, I finally perfected a recipe for gluten-free chocolate chip cookies to the point where they don’t even taste gluten-free! Of course, if you are not gluten-free, you can just use regular flour and they will be delicious.

I originally got this recipe from my daughter Kylee. Her husband started cooking them every week and they loved them! I knew I wanted to try making our own version with gluten-free flour and some of our own twists like dark chocolate pieces, chopped nuts and sea salt flakes sprinkled on top for a finishing touch final gourmet.

I am happy to say that they are DIVINE!

ORIGINAL RECIPE from Pick Up Limes

INGREDIENTS

1/2 cup refined coconut oil (refrigerate for 30 minutes or until firm if liquefied)

2/3 cup packed light brown sugar

3 t maple syrup

6 T of vegetable milk (we use this)

1 cup pure vanilla extract

1 teaspoon baking powder

3/4 teaspoon of baking soda

1/2 teaspoon salt

2 cups 1: 1 gluten-free flour Bob’s Red Mill

1 cup organic dark chocolate cocoa nibs (use dairy-free chips to make them vegan)

Chopped nuts, if desired

Optional: sea salt flakes for garnish

DIRECTIONS

Preheat the oven to 350 F

Combine coconut oil and brown sugar with a fork. Add the maple syrup and mix until homogeneous. Combine milk, vanilla, baking soda, baking powder and salt.

You can firm the mixture in the refrigerator for 15 to 30 minutes (especially if it’s hot!) So that the cookies do not flatten or spread too much during baking.

Add the flour to the bowl and stir until the mixture is homogeneous, gently stir in the chocolate pieces and nuts (if desired).

Garnish with still warm sea salt flakes.
