Hmy friends, it’s Courtney here today! So, I realized last year that I am a huge fan of making pies. I made my first pie last year for Thanksgiving (with fall crust cutters), and it’s become a fun pastime for me ever since. I am by no means a professional, but I enjoyed the process of making pies with different “themes”. This tart of the woods turned out to be quite cute if I say so myself. 🙂

I make this gluten free and vegan pie. You can find the simple pie recipe HERE (just use gluten free flour to make it gluten free – this is the flour I use.
The crust is delicious and crispy! Gluten-free flour isn’t the easiest to use, but it works well with a little extra care. I find it very helpful to use pie crust cutters like these with plungers if you are using gluten free flour. The large cookie cutters I used for this pie were a little harder to keep the dough together. I also love the extra embossing details of the pie crust cutters!
